In Hungary, stag trophies are judged by antler weight in kilograms rather than by length alone, and the southern counties of Somogy, Baranya and Zala have been producing record-book heads for generations.

Most of the best Hungarian hunting takes place free-range across large, well-managed estates, so you genuinely earn your trophy rather than collecting it behind a fence. Romania, the largest-bodied wild stags

If your priority is a wild, primitive hunt for a heavy-bodied stag, Romania’s Carpathians are hard to beat. The Carpathian red stag is regarded as the largest-bodied red deer found anywhere in Europe, and pursuing one through the dense forests and rolling hills of the Carpathians is about as close as you can get to hunting the way it was done two centuries ago. This is genuine free-range country with minimal human interference, and during the roar it is common to hear stags bellowing across the valleys.

The hunting is typically done on foot, stalking in on the sound of roaring stags much as you would for elk in North America. It rewards patience and woodcraft rather than long-range shooting, and the wildness of the setting is a large part of the appeal. Romania also lets you combine red stag with brown bear, wild boar or chamois on a single trip, which makes it one of the most versatile choices on this list.

Austria, the mountain stag

Austria offers something different again, a red stag hunt set in the high alpine country of the Alps. In our experience, Hungary works better than Scotland for a hunter whose single priority is trophy size, because the managed free-range genetics of the southern counties consistently produce far heavier antlers, whereas Scotland rewards the hunter who values the wild hill experience and the tradition over raw score. When to go

Across most of Europe the red stag rut runs from mid-September into early October, and this is comfortably the best time to hunt. During the roar, mature stags are vocal, visible and far less wary as they gather hinds and challenge rivals, which gives you the best chance of locating and approaching a good animal. Exact dates vary by country, with Hungary’s mature stag season opening on 1 September and Scotland’s closing on 20 October, so it pays to plan your trip well in advance and book the rut early, since the prime ground fills quickly.
